Ingredients

4 hot Italian sausage links
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, halved and sliced
2 teaspoons balsamic vinegar
8 slices Italian bread
4 oz. smoked mozzarella, sliced or grated
Marinara sauce for dipping

Directions

Prepare sausage links according to package directions.

In a skillet, heat olive oil over medium-high heat. Add peppers, onions and balsamic vinegar, season with salt and black pepper, and sauté for about 10 minutes or until peppers and onions are browned and tender.

Preheat the panini grill to medium-high heat.*

For each sandwich: Top one slice of bread with a generous amount of peppers and onions. Slice a sausage link in half lengthwise and then crosswise and arrange the four pieces on top of the peppers and onions. Add cheese and close the sandwich with another slice of bread. Grill 3-4 minutes until the bread is toasted and cheese is melted. Serve immediately with marinara sauce on the side and enjoy!

*Alternatively, instead of a panini grill, you can bake these panini in a 350°F toaster oven or oven about 5-7 minutes until the bread is toasted and cheese is melted.
